I feel a bit cheeky posting this – its hardly Masterchef or going to win any prizes for the most intricate, complicated recipe ever! But that’s what also makes it so good, and I often forget these easy, quick and so so tasty snacks as I browse cookery books in front of the fire on a wet and windy Saturday trying to find the perfect starter for our Saturday night feast, appropriate beer poured. (This was actually Leigh’s beer, and is apparently very good!)
2 red onions
1 dessert spoon of dark brown sugar
1 tablespoon balsamic vinegar
2 oz butter
1/2 sheet puff pastry (yes – I bought it! This is a cheat, easy recipe, remember!)
1/2 log Goats cheese
7 or 8 slices of Brie
- Preheat oven to 180C.
- Slice the onions thinly and caramelize slowly in the butter over a low heat for about 30 minutes with the sugar and vinegar. Stir from time to time so it wont stick. Allow to cool.
- Roll out the pastry. Cover with the onions.
- Cover with the sliced cheese.
- Cook in oven for 20 minutes, check (it may need a few extra minutes). Take out, slice and wonder why you didn’t make a slightly bigger one as you could do with just one more slice!
