Friday Night is Pizza Night

So I decided on Mary Berrys Tray Bake Lemon Drizzle cake – everything she does is brilliant but her book, aptly named “Ultimate Cake Book” is a regular go to here. The Tray Bake Chapter in particular is brilliant – all quick, all in one sponges, baked in a roasting tray and easy to slice up (goes a long long way). The resulting Lemon Drizzle lasted all weekend through many cups of tea & coffee, eaten by the kids and adults alike.

So onto dinners. Well Friday night is Pizza night Chez Lacken and I cant remember where I got my basic Pizza Dough recipe – could very well be from Mary Berrys complete cookery course

Its 8oz flour, 5 fl oz warm water (and multiples of – I used 2lb flour and 20 fl oz warm water for pizzas for 6), one sachet of dried yeast, good dollop of olive oil, teaspoon salt. Bung into the Kenwood with the dough hook for 4 mins, cover with cling film and leave in a warm place for up to three hours.This is our go to Friday night dinner each Friday – the toppings are usually safe enough combinations of cheese, Salamis & Ham, but we have flirted with Quatro Fromagio (Goat, Brie, Cheddar & Mozzarella), Goats cheese & Caramelized onions (ok – thats me!), (#whispers “I have once or twice tried pineapple and like it – sorry) , peppers, mushrooms – whatever is in the fridge. The cook in 17 minutes on 190 C – few cold Peronis, followed by glass of Italian Red = my dream Friday night.
